mama's meatloaf


Growing up, I NEVER understood the jokes I'd see on television about "meatloaf dinners" and the character's disdain for it. My mom's meatloaf was always so flavorful and tasty that I couldn't imagine anyone disliking it... until I tried meatloaf prepared by someone else. Then it really all made sense. Here's my mama's meatloaf recipe that even my husband (who would normally turn his nose up at meatloaf) enjoys!

Ingredients:

1 lb ground beef (I usually buy 1 lb each of 80/20 and 90/10 then bag into pounds of 1/2 of each. I just prefer this for consistency and taste)

1 cup crushed crackers/bread crumbs

1 onion soup mix packet

1 tsp soy sauce

1 tsp worcestershire sauce

1/2 cup ketchup

1 tsp garlic powder

Pepper to taste

Directions:

  1. Preheat oven to 350 degrees.

  2. Mix all ingredients together, this is best done by hand.

  3. Dump meat mixture into a greased loaf pan, top with additional ketchup.

  4. Bake at 350 for 60 minutes.
